The secret is out. If you make sugar showpieces, you already know what this stuff is for. To create glass-like, bubble free clarity in your sugar/isomalt, pour against this (3/16" thick) vinyl surface. Vinyl will not cause sugar to bubble, as many silicone surfaces will.

The vinyl sheets can be used as a flat pouring surface, cut it into squares to line the inside of a wooden box, cut into long strips to create flexible retaining walls for containing hot sugar or for cutting out a custom stencil for shaping sugar. (Remember, the vinyl sheets can be cut and stacked to increase the depth.)

Helpful Hint: Remember to put a Silpat or parchment paper beneath the vinyl when casting hot sugar. The extreme heat from a large amount of hot sugar can make the vinyl stick to your countertop.

Vinyl sheet measures 16" W x 24" L x 3/16" (3 mm) thick.
