HOW TO USE SPHERE MOLDS
HOW TO CARE FOR YOUR SILICONE MOLD
If you think bigger is better, this is the mold for you! The 8" (20 cm) diameter sphere mold is one of largest molds we make. This silicone heavy weight comes in at almost 15 pounds! The thick-walled, rigid silicone and the 360° registration track ensure that the mold does not distort when being filled with sugar or chocolate. If you are buying this mold, we have to assume you are a professional and well aware of the hazards of working with large amounts of boiling hot sugar. This mold must be banded with at least 12 heavy-duty rubber bands, which are provided with the mold, before filling.
It will take about
of sugar to fill. When filling with hot sugar, be sure to let the sugar cool as low as possible before pouring. Remember to plan ahead because it can take 12 hours or more for the sugar to cool inside of the mold.
For faster cooling, put the empty, banded mold in a large plastic bag, then gently place the entire mold in an ice water bath. Now fill the mold. The ice water will cool the mold gradually without causing the temperature to drop so low that the sugar cracks.
(#1) After banding the two mold parts together before filling, use your mouth to blow a small amount of air pressure into the empty mold. The pressure will force the two mold halves outwards, which will make sure that they are correctly aligned. (#2) The large volume of sugar in this mold will retain its heat due to the insulating properties of the silicone. To avoid having the sugar continue to boil after being poured into the mold, pour it as cool as possible.
: It is critical for the mold to be tightly banded together to prevent the parts from accidentally separating during use. Use the wide rubber bands included.
