Large Flavor Bars
The Flavor Bar Mold was developed by Pastry Chef Jimmy MacMillan and the Chicago School of Mold Making for some new desserts that Chef was working on. Chef MacMillan uses the rectangular silicone frame mold to construct his dessert from oven to freezer without having to handle individual pieces in between. The mold can shape anything from a crisp crumble to a soft alginate-based dish. With multiple cavities, the Flavor Bar ensures that each individual bar will be shaped with great consistency.
This 10 cavity mold creates bars that are 2" long by 1 ¼" wide by 1" deep (5cm x 3.2cm x 2.5cm). The perimeter of the mold is 9¾" by 6¾" (24.8cm x 17.1cm)
Made with Flex & Bake™ silicone, the molds are food-contact safe and can be used for baking up to 450° F. / 232° C. Handmade in the USA. It also works great with blast freezers and liquid nitrogen.
